You're still limited by how fast you can bring planes up from the hangar. If you're going to be operating all catapults, the flight deck will have to be near completely clear.

The catapults on the angled deck and the main deck's trajectories overlap a bit. You can launch them in quick succession but not at the same time.

This image should help.

If you notice the two catapults on the side, one is placed behind the other, but, that is just to make room for the aresstor cables. If you put two aircraft on both launchers and fired them off at once, they'd hit, or at least, the second one off would get baked by the after burner of the first. You would have to fire off the first, then the second, as firing the second would tear into the firsts wings off, and jet fuel + live ordinance + explosion = bad for you, good for you enemy.

Another thing, I've never seen them launch more than one aircraft at a time. From what I understand from a friend who served on carriers during the 90s, they only launched one aircraft at a time with a second ready to launch as to allow the majority of the launching crews to be focused on the launching aircraft to greatly reduce the chances of a safety hazard. This might also be because the right one is angled into the path of the left one, meaning that the aircraft may clear each other during takeoff, but might impact right after getting off the deck.

Plus, the two launchers off to the side are typically not used and reserved for helicopters to take off and land and seeing as how common submarines are used on NS, you'd be close to stupid if you didn't have even 2 SH-60 or equivalents there loaded with ASW gear.

Doable, but, RL speaking, they tend to make sure the aircraft launched is in the air and a good distance above and away from the carrier before launching another one, which wouldn't take long, maybe 10-20 seconds.

With SUV size you are looking at alight 90mm gun max ala Panhard AML.

Unless of course your SUV calssification would include stuff massing 30 odd tons, in which case yeah you can have upto a 152mm gun (although more likely a 105, 120 or 125mm gun). Armour will still be pretty minimal though.

about 70km/h on road, 45km/h off road, assuming you have tracks.

If you are talking about a wheeled vehicle then road speed climbs to about 100km/h with off road speeds a roughly simialr to a bit bit slower than an equivelent tracked vehicle.
