Evening is from like, 5 or so onward, I agree with lian that the line between "evening" and "night" is a blurry one at best. They're not really distinct imo.

I tend to use that as a guide myself because I found the concept absolutely fucking confusing.

I might tend to say "how is your night going" rather than evening if it's like, 11 - 12 o clock, but that's really the only distinction I make and I would still greet with "good evening".
