Enterprise was actually well done, they filled in a good amount of United Earth's early interstellar relations. They even brought back the Mirror Universe, which was epic! I personally also loved DS9 for the Dominion Wars story arch, it was the most amazing interstellar conflict to ever be played on television in my opinion. My favorite Captain is between Picard and Janeway, though.
