My major problem, though, is that I have a one sentence prompt and need three pages... I can't structure an argument out of one sentence which is "Write about an event in your life that affected you."

ALSO: I barely know her. This is a six week term. I'll be taking her next year for another 12 weeks, but I still won't actually know the woman at all.

Even better, she probably won't know you either. That means you can basically think of it as writing as someone anonymous. Can you think of any really important events that might have affected your life?
Once you have a major event, think of a theme that can go along with that.

E.g: If I were writing it, I would probably pick my parents' divorce, and then the theme could be about finding love, or about commitment, or about pulling through tough times, or even bad things that are necessary to get better.

Dogs don't bark while walking. If they stop, they may make noise. I've owned dogs my entire life, I know. When they tug or start to bark, you give them a sharp tug and keep walking. They get over it because they feel like they have a job.
