In all seriousness, it's a Masonic symbol. Quite a few of the founding fathers were Masons. There were loads of Masons in the early American government, because being one was the "in" thing for wealthy men at the time. As for why the symbol was added, well, members of secret societies tend to advertise their membership of said secret society as often and as blatantly as possible.

The pyramid is supposed to represent an unfinished work.
The eye is supposed to be Natures God guiding America.
