Where did the flat earth even come from? I mean, flat discs aren't favored by thermodynamics unless there is extreme rotation. Typically something close to spherical symmetry is preferred.

Earth being flat is not a theory, it is a scientific fact. It is round, because it is massive. Because it is massive, it has gravity. Gravity is a result of mass. If the Earth was flat, the horizon would not exist you would instead be able to see the back of your head simply by looking in the same general direction your head is in.
