But Chauvin's actions surely justify a punishment. If you endanger someone, you deserve to be punished, regardless if they immediately die of something else.

Manslaughter is, generally, the illegal killing of a person without malice aforethought. You cannot be guilty of manslaughter if something else killed the person. You have to have killed them to be guilty of illegally killing them.
