Most authoritarian governments probably only really care about your daily life insofar as it affects society as a whole. For the vast majority of Chinese citizens, the government probably doesn't intrude into their daily lives much more than it does in Western countries. Authoritarian governments aren't actually run by one guy, even de jure dictatorships require a mass bureaucratic line that will often catch or put a check on the craziest policies, and since especially in state socialist countries like China, the leadership generally has risen from the bottom to the top (Xi Jinping at one time in his life was a mayor, and before that he was a literal peasant farmer), so they have some idea of the realistic problems with certain ways of going about things. The kind of frothing at the mouth fanaticism you get out of Nazism simply can't exist in any kind of long-lasting government: you didn't really have a second generation of Nazi leadership for a reason; once you get to a second generation of authoritarian leadership, the leadership's fanaticism for ideology starts to wane and the leadership begins to turn towards more basic and practical concerns of governing their country. The same thing happened to the USSR, PRC, Vietnam, Cuba, the Ba'athist state in Syria, Turkey, etc. etc.

Outside of ideologies like Nazism or paranoid dictatorships like Stalin's USSR, even genocide is pretty "boring", it's usually less the result of racism or hatred and more the result of the government having a long-term political problem with a certain community and some external pressure to solve it quickly without regard for humanitarian issues (e.g. the Armenian genocide was the culmination of hundreds of years of ethnic dispute that just so happened to ignite during the First World War when the Ottoman state had a realistic threat to its existence).

Western style liberal democracies have only really existed for around 2 centuries, and only really became popular in the last half century or so.

Compared to human history that’s nothing. It remains to be seen if they’ll last as long as government types ran by kings and other strongmen.
