I love pretty much any cheese that isn't related to, or has the flavour of, a bleu cheese. Sorry, that cheese has rotted, I'll pass.
I love smoked cheddars, especially ones involve chipotles tucked away inside. Being half persian, I'm genetically obligated to love feta. I like having it with fresh pita bread, sliced cucumbers, bits of walnut and maybe some fresh mint. Wensleydale with cranberries is just amazing. I think it even should fall under "dessert cheese" category.

Gods, the moderators are spreading like vampires these days. Wake up in the morning and find out somebody else has red text in their name. It's downright unsettling.
