Presumably by "biological females" you mean cis women. Nobody says you can't be into cis women, but people will think you leave out trans women because the phrase biological females has been used in a way that excludes and misgender various trans people. Even if you meant people that were AFAB, you would be into men, I've seen the red flags, and you're probably not going to like me for point that out.

How does being a non-binary lesbian even work, if non-binary people don't identify as neither male nor female?

Demigirls, genderfluid and bigender people, basically anyone that IDs as not 100% a girl but still girl.

....if they ultimately identify as a "girl", and thus as a lesbian woman, then it sounds to me like those people aren't non-binary at all. They are perfectly happy to identify as "still girl". I.e., one of the two binary genders.

Can we please retire this bizarre "non-binary lesbian" concept? A lesbian means a woman who is attracted to women. And gay refers to a man who is attracted to men. If you're non-binary, definitionally, you can't be gay or lesbian. If you ultimately identify as "still girl" or "still boy", and thus identify as a lesbian woman or a gay man....then, obviously, that person isn't challenging the gender binary at all. They are perfectly happy to ultimately identify as one of the two pre-existing binary genders that define the bulk of human gender identities on this planet.
