Question for everyone: how do you make your curry? Is there a spice level, consistency, special ingredients you enjoy?

My most common curry is red Thai curry. So, red Thai paste in oil, sizzling for two minutes until aromatic (enough paste for medium heat for me; low medium if I'm making it for relatives). Then add the chicken breast (cut into strips), and brown. Then coconut milk and stock, juice of a lime and peppers then bring to the boil then simmer, then peas/green beans (whichever I have in -- both work well; peas go better if cooking for relatives) Simmer until fully cooked (about 20 more mins) and serve with jasmine rice.

To answer the poll, Lindt is my favourite chocolate brand. Lindt Lindor truffles are simply heavenly.

I enjoyed the chocolate when I visited Germany a good few years ago (I brought some home; I also made the most of my stop-off in Belgium ).

But Swiss chocolate is my favourite.
