I would say by itself slightly bitter, like cooked Chinese sea cucumber but with a meaty feel

Then it gets seasoned by the sauce

I had an oyster once, back in 2013. I went down to my uncle's (requiescat in pace) place near Norfolk, and he tricked me into eating an oyster. I hated it.

I’m fine with chowder except when it gets/tastes too milky

Smoked oysters used to be one of my favorite things. Haven't had any in a while though.

Oyster sauce itself is delicious for as condiment for many dishes such as stir fry vegetables, etc.
