The key to a good MD crab cake is using only the slightest amount of batter or egg to hold it together. It should basically just be chunks of crab meat. If you cannot clearly see it is big pieces of crab meat it is no good.
Absolutely. With just a little bit of spices. You do not want to overwhelm the taste of the crab. I have tried crab cakes elsewhere and they have so much bread and spices that you cannot taste the goodness of the crab. If you are ever in old town alexandria or that area I really recommend the restaurant I mentioned they have such good seafood, and the hush puppies are to die for.
