That explains it. I was always told "don't add too much milk or it will be watery". Well look what happened.

Butter, maybe a 1/8th to a 1/4th cup of milk or cream per one or two potatoes SHOULD do it.

Note; I make them for myself, so I am making a small amount. Here is a recipe that says 2 lbs of potatoes get a cup of milk and 2 tablespoons butter.

I like the texture of the powdered freeze-dried just-dump-in-boiling-water potatoes better than the boil-and-mash-yourself kind. It is slightly grainy, and not sticky and of the consistency in-between apple-sauce (why did my brain just try switching to German?) and pudding.

I still prefer b(r)oiled plain or twice-baked with garlic and pepper better, though. It just takes less time to pour the freeze-dried stuff in boiling water than to b(r)oil a few potatoes, whether they be Irish, Russel, Yukon, or orange sweet (which aren't even in the same family).

Boiled rice, quinoa, grits, hominy, maize, oats, and legumes are also comparably good (individually).

No offence Shwe, but you've reminded me that I forgot something on my dislike list -- pumpkin and squash. Just don't get on with the texture. I get on fine with others in the gourd family -- melons and cucumbers, for example.

Also, sweet potatoes. Again, it's a texture thing. Even a baked one tends to be far too soggy for my taste.

I hate sweet potatoes, I was once on a hiring committee and I said this, and the woman from HR said "don't you say that till you have had my sweet potato pie".

2 days later she comes in with her sweet potato pie. She did not lie, that freaking pie was outstanding. I can still remember how good it was.

I wonder what she did with it...

I've tried baked sweet potato, roast sweet potato, chipped and fried sweet potato and boiled sweet potato (definitely not advised; there's one meal I can't forget -- for all the wrong reasons), and I've never found it palatable. Any cook who could serve palatable -- let alone outstanding sweet potato anything -- earns my instant admiration.

I made mashed potatoes today. They came out a bit chunky though...

Best way. Boxed stuff is meh.
