Hmm a hard one. A decent English roast would be one: roast joint of beef, lamb or venison -real fucking meat not some vegetable like chicken. Then add roasted potatoes, Yorkshire pudding; homemade of course with beer in the batter, make some sage and chestnut stuffing, roasted root vegetables and maybe some peas and whatnot then make a rich gravy. Serve with horseradish, mint or redcurrant jelly and frothing vessels of stout or ale.

I’m a huge fan of other hearty meals such as stews, meat pies and traditional breakfasts.

A good dinner should have an abundance of meat, alcohol, excellent company and conversation and it’s nice to be able to smoke between courses too.

A proper dinner should comprise a soup, a light starter, the main course, a sweet dessert, cheeses and then retire for coffee. The food courses should be accompanied by wine until the dessert course in which case it must be a dessert wine and the cheeses paired with port. The coffee ought to be offered with liquor.

It's either homemade pizza and Pritty, mushroom and chicken risotto and Pritty, or the fake stew I just invented and Pritty.

Honorary mention for all manner of pasta, but specially ravioli with homemade tomato sauce, and lentil stew and wine.

Pulled pork barbecue with carolina gold (mustard-based) sauce , macaroni and cheese (the good kind like grandma made), collared greens, shrimp and grits, fresh-baked buttermilk biscuits. Pecan pie for dessert.

I personally cannot stand "normal" dinners like chicken with vegetables. It's super boring to me and I was fed that shit growing up. Does not spark joy. But you wanna know what does spark joy? Quinoa-stuffed winter squash with cranberries and pistachios. Or a chickpea and sweet potato breakfast burrito.

Spices.
Love nutmeg, peppers, cardamom, curry, ginger etc. It depends on the dish which flavours i use.

But a good dinner is a well prepared diverse meal with clear flavours/ surprising flavours.
