That said, I feel that these meat substitutes are dumb — if people don't want to eat meat for ethical reasons or whatever, why should they want the taste of meat, but actually made of bean curd and other weird chemicals?

Yes. Through the natural evolutionary and breeding processes that God intended and used Himself. EVERY crop and EVERY livestock are genetically modified organisms. Breeding desirable traits in plants and animals is entirely different from actually restructuring DNA itself.
Gene therapy- that is, repairing defective genes to normal human function -is the ONLY acceptable means to edit DNA. To create DNA or, God forbid, create life is evil.
Meatless burgers are just a very "primitive" example of this. While not directly tied to genetic engineering, the idea of spawning... whatever it is that's in meatless burgers is the danger.
Remember, it's not like we're taking livestock muscle tissue and using it to synthesize real meat in a sleazy way.
This thing is entirely artificial. I don't even know if it uses natural ingrediants at all...
