I mean, originally he was basically a water-based Superman, strong and fast, being able to communicate and control underwater life. He spent a lot of time fighting Nazi's and their U-boats during his wartime appearances.

Later animated shows are what made people start to see him as weak, reportedly.
More recently comics and shows have hyped up the stronger parts of his powers and nature to account for that.

While there's no direct canon answer for this, it's generally accepted that Atlaneans live longer than humans. Number range from anywhere from 200 - 500 from what I've found.

don't ask me how it works

but every time in media where Atlantis has gone against Earth, Earth somehow can't win without the help of Superman, Batman etc

they are "more technologically advanced" (except its never fleshed out how), I'm assuming its a combination of having superior magical pseudo-electronic jamming weapons, telepathy, and superhuman stats etc

I'm only running with that premise, don't ask me how it all works

in the Aquaman movie Mr. Ocean Master apparently thought that they could easily defeat the Surface (it was only a matter of uniting the sub surface first). I wrote the scenario assuming this is true and he's not a maniac; its consistent with how powerful Atlantis is portrayed generally

I mean in that other link they somehow sank all of Europe without losing anyone in the war so... take it as you will

The older stories are no longer considered in-continuity for DC's "main" history, they're considered to have taken place in an alternative reality (which no longer exists) where the "heroic age" began earlier... just like the stories that had characters such as Superman, Batman & Robin, or (the 'Diana Prince' version of) Wonder Woman fighting against the Axis in that period.

Debateable. Atlanteans as a rule are much stronger and more resilient than humanity. Though I reckon there might be less of them in total. They also have more advanced tech. Purely on an Atlantean v Human fight, with no Hero intervention, like, armies staring across each other battlefield. Atlantis would probably win.

War doesn't quite work like that, so it's hard to say. I'd still say humanity is on the back foot, because we rely on the ocean for survival as much as we do the land, so if we do anything to it to fuck it up, we're fucking ourselves over in the process. Atlantis, on the other hand, doesn't seem to rely on the land quite as much as we rely on the ocean. So if they destroyed the land, chances are nothing much would change, except to create some new zoning areas for underwater condos or parking lots, idk.

To note, it wouldn't actually take much for humanity to "defeat" Atlantis. They can just irreparably damage the ocean. It'll just probably kill them in the process as well.

So let me get this straight, Atlantis has super-duper technology that can wipe out the human race in warfare with minimal casualties to themselves, yet cannot seemingly reverse the damage humans are doing to the oceans?

True.
In fact, in those early stories, Aquaman wasn't even 'Atlantean', he was a "surface" human whose father had experimented on him...
