It's a form of physical contact. Yes, it may be brief, and yes, it conveys to both parties on whom the person they're shaking hands with is. But since shaking hands also requires a lot of eye contact, this goes against the principles of Islamic modesty to always be on one's guard.

While one may have enough restraint in most cases to not act on their desires, however, in their minds, they may think sexual things about that person of the opposite sex. Islam also strives to eliminate impure thoughts as one must be pure in all aspects - mind, soul, and physical body.

Oh, I though you meant "relations" as in non-romantic. Yes, those are haram. Being with the opposite sex is mostly haram unless it's with good intentions, and even then there are parameters.

Good intentions such as if you have to talk to them about something important like a job interview or cashier or if they're your boss or supervisor. Or you can hang with the opposite gender so as long as a family member is accompanying them.

But outside of those, there is no reason in islam.

Sure, but if you work or go to school or pretty much leave the house at any point then you will end spending time with women. Coworkers, classmates, friends, friends of friends, etc.

It's kind of hard to avoid. Its must more beneficial to simply learn some level of self-control.

People can't be prevented from developing thoughts, they just learn to live with them, but it is better for them not to develop in the first place.

I find it better to socialize and learn self-control then to shut oneself away.

In Arab culture, there's a lot of affection shown when two people embrace one another. It's not romantic, but purely platonic. The Spanish also do this, taking it from the Umayyads.

If shaking a heads with a woman is bad because it can lead to impure thoughts, then logically, isn’t shaking hands with men a gateway to homosexuality?

Eh, not really.
Homosexual acts are haram in the 1st place so it doesn't really matter if they hold hands or not. But if that risk is a thing then the man/woman shouldn't shake hands with the same sex either.

So if unmarried sex is also haram, then what is wrong with shaking hands in all other cases?

Not sure what else there is with a married woman twice your age holding public office shaking your hand in the official capacity of affirming citizenship.
