IIRC it's because under Sharia Law the wife adopts the husband's religion, and Islam ain't too keen on losing followers.
I could be wrong though, so take that with a grain of salt.

There isn't a way to my understanding, without her forsaking what Islam says or without you forsaking what Christianity says. Unless you convert to Islam or if she becomes an apostate in abandoning Islam for your faith, then I recommend that you leave her. Practically speaking, this is the only way. "Be not unequally joined together with the unbeliever." In the Old Testament they were forbidden from intermarrying with the Heathen. You'll want to do your Christian thing and she'll want to do her Muslim thing. No way it can work.
