Well where I am from there are no gas pipes bringing the thing to your house. So yes, really.

I have an induction cooker, which is really annoying if you forget to buy the right pan.

Sure, but if your choice is between buying, handling and generally screwing around with gas tanks when you can just use an electrical stove is just an unhealthy amount of bother. And this is from someone that commutes on foot for fun.

Typically the cheaper apartments in China came equipped that way, and the kitchens were fucking tiny so you could buy an electric kind of stove but then you'd probably have to balance it above the gas rings.

Same as the bathrooms, my first apartment in Beijing I could shit, shower and shave all at the same time.

And restaurants do use gas appliances.

It's magnetism, right? So the wrong pan means it won't cook-- are there cases where the wrong pan can be dangerous, too? Good because you don't get a hot stovetop and you can touch it.

If magnet sticks to your pan/pot it's good for induction top.

I don't think there should be any danger with wrong pans.

Only questionable thing about induction tops is that they work at kilo/megahertz range, and some fear health side of these.

Same for me, both in Toronto and in where my grandparents live in China. To be honest, it's feels safer to use the electric ones. And on top of all that, my family uses a small gas stove for hot pot, tbh, it's very inconvenient to use considering you have to buy those small gas cans once in a while.

There are actually many places on Earth even in the rich countries where people don't have three-phase electric power and therefore they can't plug in a stove or water heater. And that's the "proper" electricity I was talking about.

As far as I understand yes. At least the proper home sized ones. I am not sure about the mini things with one hotplate.

Houses receive single phase power. Only factories and server farms get 3 phase power. And it's expensive.

It's all about AC and making it more like DC for high power applications. Houses do not need that much power.

In Finland we receive 3-phase power to houses and if nothing else, electric stove top/ovens and electric sauna stoves are three phases.

In Finland you can't even get a single phase connection, if household alreadt didn't have one. 1-phase contracts are sold solely as legacy contracts.

I prefer wood fires saunas anyway.

One time we got locked into an electrical sauna. The power was down so it was not getting hotter but the stones were still much too hot to touch. The "automatic" door of course failed to open.

I imagine St Catherine's police discovering us later, shrunken dessicated mummies

Yeah, you can't beat real flame. Down here most people do not have gas service in their homes, so then they do a lot of cooking on charcoal and propane BBQ outfits. it's to make up for that flame effect they have been missing
