Frozen haddock is actually OK, even if it's not quite as nice as fresh. But frozen clams are terrible.

If you bought frozen fillets from packaged ones, be sure to use water absorbent paper towels to dry up the water, you want to avoid that mushiness since it absolutely tames the texture. My other advice is not to use too much salt when cooking the fish, and be sure not to overcook them (I saw this Gordon Ramsay video once, apparently for salmon, you should spend most of the time searing the fish skin, that way the meat itself doesn't get overcooked). Also also, frozen lobster tails are absolutely the worst, try your best to get fresh ones.

Or just buy them still frozen and defrost when you need them.

The thing with defrosting them is, in my family we don't use microwave defrost, since the heat will damage the texture, so natural defrost is preferred. And in this, often time when you defrost naturally, you might just leave it out for a couple of hours without checking, which overtimes, the fillet will be soaked in defrosted waters, and it becomes a bit mushy. So the other thing is, when you defrost, it's important to immediately dry it off soon as it defrosts. Also, don't get frozen clams, I tried those once, it was darn awful.

The only frozen seafood I will get is cooked prawns.
Fish on the other hand, I tend to find works pretty well.
Try this with any frozen white fish.
1 can of chopped tomatos
1 finely sliced onion
1 tablespoon of soy sauce
1 teaspoon of mixed herbs
Onions into a pan until just brown, add the rest and simmer for 10 minutes.
Up to 4 portions of white fish.
Poach them in the sauce in a covered pan until cooked.
Serve with new potatoes and green beans.
It's good, like really good. And super healthy.
