I think you can't really compare the situation in Catalonia with any currently unrecognized state. Those either have a country supporting them (mostly Russia) with economic and military aid, or the state they seceded from is too weak to impose their rule (Somalia with Somaliland).

Since Transnistria has been brought up... it holds elections but they're not free, and the state is essentially an economic monopoly held by a company named Sheriff Enterprises, which also has considerable political influence. Definitely not what I want to see in Catalonia.
A Catalan state has been declared quite a lot of times in the last 200-300 years, and in the end Spain always ended up imposing its rule again. One day we will be independent, but this might not be the time.

Why do I have the nagging feeling that ten years down the line Spain might retain Catalonia but lose its monarchy due to events that transpire in the process? Maybe because I've seen it happen elsewhere?

There is still some uncertainty if Mossos will obey orders from Puigdemont and therefore 17 000 armed rebels will happen. Tanks and APCs and some 'Operation Storm' is then a certainty, I suppose.
But there are also Catalan commanders in the regular Army. If this Mossos will turn their weapons against Rajoy, throughout purge will happen in Erdoganish style.

The police (Mossos d'Esquadra) was formed from Civilian militias founded in the 1700's.

In the "good old times," France and England would probably be on opposite sides of the issue and probably using this as an opportunity to attack the Spanish Armada.

Catalonia has no proper army defending it, and even president Puigdemont was criticized for saying that an independent Catalonia should have one.
On the other side though, Spain can't use the army to crush Catalonia without some serious international consequences, and the government knows it. This is gonna be fought with legal force instead of military force, I'd say.
