As someone from a country with 3 official minority languages and another handful of unofficial ones, bilingual road signs aren’t that big a deal.

That was really a minor issue. It's the other two things that really bother me.

No one really knows. Texas is an enigma. It's somewhat stuck in the Wild West, somewhat part of the 21st Century, part American, part Mexican, fiercely patriotic yet fiercely independence..... it's entirely Texas though.

Have you ever eaten an Empire? I bet you haven't. They're quite tasty with a bit of salt and pepper. Not a fan of Tar Heels, though. Kind of like pickled pigs feet, but more chewy and less tasty. Show Me's are also quite delicious. However, eating first is best because everything is still fresh and warm.
