Many of the voters that voted for him have done so just to vote against Le Pen and it's not like he was an underdog in this race. He is a former banker, worked for the Rotschilds and god save us from what we are about to discover about him and his campaign from the recent leaks. It's kinda like Trump v. Clinton - neither are good. If anything we should be sad that the choice was between two bad candidates, because let's face it - neither of them are close to being great.

The winner is declared at 8 pm, before the vast majority of the votes are counted. The actual tally comes later during the night, and never deviates by the exit polls by more than like a percentage point or so.

Macron left the Socialists precisely because his advice wasn't heeded, leading instead to Hollande's neutered economic policies.
