Tried making rice-flour pancakes today. Plain, vanilla, and chocolate & vanilla, although I burnt the plain. Indian-style rice-flour, not Japanese sticky-race (which is something I'll be trying at a later date)

It's nuttier than normal flour, gets crispier, and breaks up way easier. Doesn't cook particularly evenly. I loaded it with cocoa, like I do normal pancakes, but the problem is the nutty aftertaste - rice has a very distinct staying power.

I think it has potential as part of a Western-style dish. Just not sure in what. It gives depth, and it has an interesting uneven texture. It's hard on bad technique under heat, but it's pretty forgiving about timing and overworking (albeit because it's basically overworked to begin with).
