I remember hearing once that pre-Christian Romans thought Christians were cannibals because of the Eucharist :P

That's a certainly on odd query, I mean there's over a thousand years worth of theology you could have perished to tell you the theological reasons. So I guess you must be asking why, as in why do I find it an acceptable teaching but then again I'd have you to point you back to the earlier comment about there being literally over a thousand years of theological development on the subject.

So maybe your asking how one can accept transubstantiation while looking at a wafer and cup, but I feel like you're asking a deeper question then, of why would anyone have faith in anything beyond their own nose?

I am not aware of any theology justifying the doctrine. Theology explaining the doctrine, sure, but nothing actually justifying it. Why insist it's not merely metaphorically body and blood? As a metaphor it has meaning - but if you insist it's not a metaphor but a literal transformation then that meaning is lost, and it's just a bizarre ritual.

Actually, if there is no transformation, then it has no real meaning. If it's just a metaphor then it's just the lame ritual that people do once a month or just on Easter. Removing it entirely would have no real effect. The fact that Christ is present in the Eucharist is precisely why it is so important.
