Back in the 60s it was generally defined as an affordable performance car, one based on the basic platform of an ordinary family car, but given a much more powerful engine and having aggressive styling.
For example, the Ford Mustang was based on the humdrum Ford Falcon compact sedan but had a much more exciting body, with a long hood, short trunk, and low roofline; and it could be had with a powerful V8 engine and sporty interior stuff like bucket seats and a console. Or take the Oldsmobile 442; it was basically just a regular midsize car, the Oldsmobile Cutlass, but with some sporty touches inside and out and a big 455 cubic inch V8 taken from full size cars stuffed in the engine bay.
Nowadays it's become a performance/sports car that still has a back seat, has a powerful engine, and has aggressive styling, but is a bit bigger than a 2+2.
