Zombie is applicable provided you use the term loosely, meaning "re-animated corpse" regardless of how the corpse was re-animated (be it magic, virus, fungus, radiation, parasite, whatever). It's basically all "zombie" means these days, given the variety of ways they've been created and the varying levels of sentience zombies have been given in relevant media.
Jesus might be a lich if the consecrated wafer and wine chalices are his horcruxes. Maybe if we destroy them all before a priest can consecrate any more then Jesus will no longer have any body?

Nah, Jesus can't be classified as an undead creature. Considering all of the various Christian doctrines on the divinity/humanity of Jesus, Jesus would be least be a half-celestial hero level deity, meaning that he'd have the outsider subtype, thereby prohibiting him from becoming undead. In all likelihood, Yahweh probably just cast true resurrection when no one was looking.
