What my aunt does for me is that she pours a small amount of rice oil into the rice before it is cooked, and, once it is cooked fully, the rice becomes soft and fluffy.

Carnaroli all the way.
In a pinch, Arborio will do, too.
Unless you want to do a paniscia (a kind of risotto from Piedmont), which, iirc, requires a Sant'Andrea.

Bauchspeck is german bacon (an old name for it is indeed bachen), pancetta is italian bacon - I say we cover the world in Bacon!!!!

and isn't guancile a salami?

I usually buy the mixes, in bags. Yes, bad Nana, yes. But my culinary options are rather limited in the US, because of where I live.

Interesting, you dislike spaghetti? Really? Okay.

Its one of my favourites when cooked right. But the spectrum of a spaghetti dish for me can range from completely unacceptable to completely delicious.

Well, I dislike it less when it has Alfredo sauce on it. I really don't like the red Italian tomato sauce. Tomatoes and I really do not get along.

Make a garlic based sauce. It's very light on the stomach and easy to make. Just use olive oil, sauteed onions and garlic and salt and pepper to taste. It's amazingly good. Even add some bacon bits (actual bacon, not those red chips). It is awesome.

One thing I love about living in California: access to the awesomest smoked bacon ever. Not too fatty, nice and meaty, doesn't shrivel into nothing when cooked, and dear goddess, the flavor-! Sometimes get the ends & pieces to use in slow cooker soups and stews and the like, or to cook with veggies... sooooo goooood.

Damnit, I may have to go order some now.

It was so good, until the bacon part. :p
Thanks. I'll try that recipe part without the bacon bits. I'll just use croutons as a replacement, if you don't mind. :p
