It could also have easily become inflammatory due to microbial activity (what we call reimoso here).

Which is why I don't often trust places other than actual houses (my own or those in which I'm a guest) or restaurants with fine looks and a reputation to serve me it. (The exception is the pastelaria that offers the best yakisoba in my city... The Chinese cook has a lot of skill, I'm sure they are poor and perhaps didn't study to become chefs but understand what they are doing.)

I ate camel meat from a bazaar in Afghanistan, horse meat out of a can in Kazakhstan, I ate a monkey's brain in Southeast Asia. Not my favorite food, but certainly better than the calf brains I ate in Morocco!

I've eaten cured wallaby, emu, and salted caramel duck tongue. Also, candied barbecued lamb hearts, and alligator tail. My fiance and I regularly eat kangaroo steaks.
