Back in Brack! (Or the NSG Cakes Thread)

Postby The Whispers » Fri Jun 28, 2013 9:51 am

Everyone likes a cake (other than diabetics, maybe). From the tray bake to the massive gateau to pineapple upside-down cake and everything inbetween, there's a pretty wide gamut of snacking available. What's your favourite?

Personally a big fan of carrot cake, there are about a million good recipes around (basically anything on the BBC Good Food site is sure to not be terrible), and yeah. Mmm. With raisins, sans walnut or whatever because no.

Share recipes and such here!

Diabetics like cake, they just can't have it.

FYI, Boston Cream Pie is not a pie, it's a cake.

My favorite:

That's an incredibly rich, decadent, delicious lemon torte from the best pastry shop I've ever encountered. Nom nom nom.

Of things I regularly make myself, pineapple upside-down cake may win the prize.

Just... just cake. Cake is awesome.

I guess I have preference for birthday cakes and the like though, with fruit and cream on the inside. Yummmm.

I don't like anything that's very sweet, which limits the range of cakes I enjoy. I like nuts and coconut though, also fruitcake if its not too sweet.

I make a baked cheesecake (with vanilla or almonds [slivered on top or ground-up in the biscuit-base] or more likely both) which I think is pretty good. It's best when it rises and stays risen, which I don't really have the hang of.

Fun fact: royal icing was renamed thus during the French Revolution to make chefs detest the monarchy.

I like fun facts :) here's another one, courtesy of QI

One of the most curious English cake customs concerns a love charm called cocklebread. The 17th-century diarist John Aubrey’s description is unimprovable: “Young wenches have a wanton sport which they call 'moulding of cocklebread’ – they get upon a table-board, and then gather up their knees and their coates with their hands as high as they can then they wabble to and fro with their buttocks as if they were kneading of dough with their arses, and say these words: 'My dame is sick and gone to bed/ And I’ll go mould my cocklebread’ ”. The rich dough, imprinted with the young woman’s backside, was then baked and given to her intended, who would then fall under her spell.

That's not entirely true.
They can have sugar free cake, or in regulated and calculated amounts of sugar.
They can eat it, they're just not supposed to.

Simplest cake ever - straight from Pellegrino Artusi's book.

Same mass of:
eggs
butter
wheat flour
sugar (refined, beet)

Mix. Add yeast and a bit of milk. Chuck in the oven (180°C) until the surface has turned dark brown.

Flour type must be ofc pastry flour (US) aka Mehltyp 405 (D) aka type de farine 40 (F) aka farina 00 (I).

I'm a fan of lemon cakes with strawberries. But, I do not like icing. At all. I cannot stand icing unless I make it from scratch, which takes me a long time and makes a big mess, but it's also my grandmother's favorite icing, and she loves icing,

I like my grandmother's german chocolate upside down cake, and her coke cake when I'm in the mood for being sticky and feeling like I'm covered in pure sugar. I generally don't like chocolate cake or bakery-made cakes.

My Mom used to let us kids pick our cake/frosting, flavor/color for our birthdays, my most creative choice (12th b-day iirc), orange cake (color and flavor) with blue frosting (raspberry flavor) I set the bar pretty high with that one...
