China knows that it now has the military might and economic power on the world stage and is getting land hungry, a sort of victory disease they are having. Only China is shrewdly going after nations weaker than itself and isn't laying any claim to countries which are in a position to effectively retaliate like say, Russia. I interpret this as China testing how far it is able to go with territorial acquisition before it encounters any substantial resistance to those plans.

China knows that it will eventually get Taiwan, and is setting its sights on picking as much land off of its neighbors as possible. They will not be stopped unless all of the targeted nations including the other world powers join forces and take a stand against Chinese aggression. There needs to be a "firm line in the sand" established for China to not cross.

This isn't the 12th century any more. Nations don't go on wars of conquest anymore - and most likely can't to any real degree. War is probably more expensive now than it ever has been, and considering how globalized China's economy has become, any wars of conquest would give the rest of the world every excuse to place strict sanctions on them and cut off trade completely, which would be a mortal blow to their economy.

They learned the same lesson the US is learning; you can get a lot more of what you want with back room dealings and soft power than you can with military aggression.

This is just posturing, nothing more. Something to rile up their populace and stoke patriotic fervour.
