Pssst go with a Savage, my model 116 7mm magnum dropped a cow elk like a sack of shit this winter very accurate I love it so much I bought one in a 22-250 coyotes fear me.

A Remington 700 will get about 1MOA out of the box (basing this off of Rem. 700 SPS Varmint, .308 Winchester), and they are basically the AR-15 of the bolt-action world. Relatively inexpensive, too.

Savages are less expensive (especially the Axis line), and while still plenty accurate, I feel as though the Rem. 700 will be able to be fine-tuned to a greater degree.

Savages are usually considered to be the most accurate rifles out of the box due to Savages attention to detail when making their rifles. However 700 actions are the most used action when making a custom gun.
