Artemis or Athena because they're a few of the goddesses that aren't portrayed in a sexist manner, which is kind of ironic given how the Greeks behaved towards women. I like Loki and Odin for male gods though, Loki for his fun, tricksterish ways and Odin for his intelligence and I'm going to be frivolous here, because eyepatches are cool.

There are quite a few pagan gods whose stories I like, so it is hard to choose. Sutekh, the Egyptian god of chaos and the desert is probably the most interesting to me. He was originally a hero, but later Egyptian stories about him portray him as evil because of his association with foreigners. He is kind of analogous to Satan or Lucifer in Christian mythology.
