I like wine.

I'm not a snob. I'm not going to launch into a self-serving rhapsody about the health effects or the varieties of taste.

I like wine, because:

Wine is cheap where I live. By alcohol content, only very bad fortified wines can even compete. I drink a lot, and I'm poor because I don't like to work. Price is the only factor apart from not drinking methanol, cough mixture, or cologne.

Wine is about the right strength, that I can get very very drunk on it without either dehydrating or needing to pee too often. A bit strong perhaps, but far preferable to 'one drink one piss' as with beer. OVER-hydration is particularly a nuisance after going to bed.

I enjoy spirits, but after the point of not thinking about the future, I tend to quaff them straight. The next day is really bad, due to UNDER-hyrdration. Spirits I like (gin particularly) but I can't be left alone with a bottle, so I don't buy bottles.

Absinthe does have a liquorice flavour. It's the anise.


Anise, Star Anise, Fennel, Dill, Liquorice, and Tarragon all have essential oils with a high proportion of anethole (which is what gives the louche - the cloudiness you get when you mix absinthe with water). However each of them have other chemicals which modify the flavour so that they are distinguishable from one another. Traditionally absinthe would be made from a combination of wormwood, anise, fennel, angelica, and hyssop . However the importing of cheap star anise from asia meant that it was often incorporated into absinthe recipes although anise has a superior scent. This may change as the price of star anise has rocketed as it is a major raw material for producing Tamiflu.

When absinthe was made illegal in France, two substitue drinks emerged that were essentially absinthe without the wormwood. These were pernod and pastis which are both flavoured with anise - though the pastis is also flavoured with liquorice.

So although there are a lot of similarities in the tastes, I personally think aniseed and liquorice are distinct flavours. I know way too much about this....

But then that comes down to a personal opinion. I can't say I can really distinguish the difference, but then I don't like those flavours at all.
