Yup. Sheep's, to be precise.
Gives them that nice snap when you bite into them -- it's hard to find dogs with casings outside of hot dog carts. Most of the ones in the supermarket are meat slurry that was extruded into plastic cases, cooked, then stripped (which is why you get that starburst wrinkle effect on them on the ends). Not as satisfying to eat in my opinion.

And if you've eaten most kinds of sausage, you've had intestines before.
