The terrain, in most areas, is actually fairly mountainous and rocky. More oppurtunities than anywhere on the Plains.

However, there aren't any caves to hide in that I'm aware of.

And yes, the plains would be difficult. There's nothing here but cornfields and trees.

They're not that close to seceding right now, so I was figuring on a scenario where the secessionist movement grows over the next several years, and there is time for it to evolve. I agree that violent secession is more likely given what I know of the local culture in Arizona, but I don't see how it's a forgone conclusion.

Unless the United States government willingly states that it is now independent, it is not. If the people of Arizona declare their secession, they will be free on paper, nothing more.

Arizona also has a much smaller population than Iraq, and I'm sure a lot of the more intelligent population will flee the second the state of Arizona announces plans to secede.
