Don't worry, I understand your frustration. It grinds my gears when people use that phrase to justify saying hurtful things to others. That's exactly what it is, a thinly veiled excuse to be able to say whatever they want without consequences because "I am attacking what [I perceive] is a sin, not the sinner himself" without acknowledging that they are attacking the actions or beliefs a person has, and therefore they are attacking said person for their actions or beliefs.

I stopped discussing Biblical doctrine with people long ago for the same reason, because like you I tend to be very opinionated when it comes to that (part of it being that I was raised studying the bible both at Evangelical and Catholic schools and I was also made by my grandmother to memorize and understand the Bible as well). Grinds my gears when people use the Bible to justify their wrongs.

It's not just offensive, it's also stupid and seriously harms any dialogue between the groups.
