That's the past. Find me one lad that goes to a university just because they want to expand their knowledge on a field. An overwhelming majority studies in a university solely to find a job, because they know that without a degree these days, you don't go far.
And if you do set as an example Bill Gates or Steven Jobs, they were in a different time, where computers and microprocessors were just picking up momentum.

Philosophy has its uses in the education system (here we have a lesson called philosophy in high school, don't know if it is taught in other countries in high schools) and theology lands you a job at religious institutions or in the education system. Irrelevant to what you said about universities being invented for that purpose.
You're also only thinking about undergraduate students, those lot want to get a degree and make bank with whatever they can get. People who pursue higher degrees tend to want to expand their knowledge with no apparent or immediate benefit to themselves. In fact, it's the opposite from what I know, grad school is a financial drain and most would probably be better off having not done it.

The role of universities shifted over the years. Yes, they were invented so that select few can study but later, when they became accessible to the rest of the population, their role changed to serve the needs of the economy and industry.
