The refined long sword will be great once you get Strength and Dex up past 30, though that's a lighter weapon, not a heavy hitter. Neither of the axes have any damage scaling, which is good early game, but tapers off later, especially with split damage when a boss resists one damage type.
If you specifically want to see chunks coming off of boss health bars, you're gonna want to be using greatweapons, or magic, though the latter only comes online lategame.
