Really sacking should increase the morale of armies, not decrease it since soldiers got pissy when not allowed to sack, and sacking shouldn't decrease prestige.

It's easiest if you're in a Monastic Order as it makes removing sinful and bad traits (Cruel, Cynical, etc.) easier. You gotta get tons of piety, don't have any sin traits, don't murder anybody, have positive traits like Honest, Just, Trusting, etc.
Basically just be as much of a goody two-shoes as you can possibly be. It also helps if the clergy likes you; even more if you have relatives in the clergy.

I'll only talk about the ones I have, the others are more knowledgeable than me.
The Old Gods, Way of Life, and Holy Fury are the only ones that everyone loves.
Legacy of Rome is great if you're playing in the Byz Empire. Retinues are a nice feature too.
The Reaper's Due is great but not necessary. If you like disease, injury, prosperity, and destruction, you should get it.
Conclave is, in my personal opinion, absolutely fantastic. However, a lot of people don't like it, so you should be careful when buying it.
The ones that unlock other religions/governments (Islam, Indian religions, republics, nomads) are very subjective, and you should only get them if you're really interested in it.

Dont listen to the people who dislike Conclave, they are weak and there blood line is doomed to fail. The amount of political manuvering avaliable to you without have to actually fight wars in Conclave is pretty good. Looks like I'll get Way of Life and Holy Fury at first then. I would get Reapers Due but I'm not really looking to play in the 14th century and tend to start much earlier and oftentimes do not play a dongle game for that long so not sure I'll get much out of it.
On a related note I do kind of hate Paradox dlcs as oftentimes the features released feel like they should just be part of the base game or as part of patches and such.

Oh, you think the Black Death starts in the 14th century? Oh no, it can start at any time, plus all the normal smaller endemic diseases to Europe at that time popping up. I would honestly get Reapers Due as soon as you can.
