They've both aged horribly. They might have been great when they came out, but honestly they're just products of their time now. That's not to say they aren't good games - they're certainly better than 3, 4, and 76. But New Vegas is the best; memes aside.

Don't let me catch you enjoying Morrowind, Daggerfall, Darkest Hour, VTM Bloodlines, Battlefront, Rome/Medieval Total War, Dragon Age 1&2, Non-Quake 3DFPS from the late 90s etc. If they released the source code or acceptable modding tools Fallout 1&2 would be in the vein of fucking DOOM for modding popularity.
What exactly does New Vegas offer that Fallout 1&2 haven't done better?
Villains: The Master > Every fucking Fallout antagonist. Also Frank "Michael Dorn" Horrigan who rips Deathclaws to pieces with his hands is more badass than any fallout characters.
Atmosphere: Yes hello Interplay? It's Games Workshop, we're suing you for being too grimdark.
Character creation: What's that you want to be a complete idiot and have that do more than give access to a few easter eggs? You can do that. Want to create a broken build that lets you speedrun the game? Here's the guide.
Shooting: Oh please New Vegas may be better than 3 but was still a joke with its shooting
Gore: Wow who would have thought seeing a sprite get shredded by an smg and collapsing into a puddle of blood was more gruesome than a bunch of boring slices of a character model lumped into a pile with some red polygons. Seriously look up Jacoren's death animation I would get the RED TEXT if I linked it here. Modern Fallout lacks real gore and if not for the drugs and sex it'd be rated T.
Main quest: I don't even need to explain how much better it is
Side quests: That's the only thing newer fallout does better.

What next? The older HOI, EU, CK, and Victoria games are irredeamable shit because the new ones exist?

No one is saying they're bad games, but 1990's turn-based rpg's don't have the same charm that they did back then.

Poland is a monster, my custom-made nation has taken over Prussia's role, Austria got PU'd by Poland, who also took Moscow from Muscovy, I'm allied to Britain-who has a PU over a united mainland Scandinavia via PU'ing Sweden who owned that-, the Ottomans(To fight Poland), weakened Muscovy, weird Netherlands, and yeah that's about it, vassalized the remnants of Saxony I didn't eat up and some other HRE Minors, it's 1730's/1740's.

My kingdom is a Prussian Monarchy(I basically made my own custom Prussia to suit my personality), and Poland is allied to Bohemia which took a chomp out of Hungary-who was HRE Emperor at one point-, Poland themselves chomped down on Hungary, and Poland is also allied to my ally Savoy, and some other nations I forgot but will add up to be a threat. We all hate France and Spain though, oddly.

My allies aren't willing to fight Poland yet, and I'm kinda sitting here being unable to do nothing because since I'm a Great Power Poland can intervene in any intended quick war I launch.

I don't see how this would be possible to set up without mods or console commands, considering that levies and mercenaries are all several different unit types, but it could definitely be possible to do if you made a rule that you get a generation or so of grace (or a fairly large sum of gold acquired via console) before having to exclusively use archers to build up a decent archer retinue.
An English-cultured merchant republic (for longbow retinues + massive amounts of gold) could probably pull it off (provided that it's possible at all), though.
I'll have to try this over the weekend.

Update: Game ended after a particularly nasty outbreak of disease combined with the Doge going 'fuck you have some assassinations'.
