Why did soo many droid ships have crews? Like i get the ships were probably sold to organic factions etc, but if you are using them with droid crews, why not build a different variation of ship that is controlled by a processing unit or something and give the ships more weapons and armour?

Alright googling the matter, it seems many CIS ships were controlled by AI brains, they were just shit so they went back to crews.

The Recusants were kind of stupid. There’s a scene in III where one is crashing into a Munificent class frigate. EU writers interpreted that as Recusants having very slow reaction times.

There’s an episode of The Clone Wars where a bulkier one is modified to hold a crew and serves as Grievous’ ship. With that in mind, maybe there were different variations of each ship class.
