A lot of Force things aren't explicitly spelled out or even explained. Doesn't it make sense that he'd be less able to shield his mind while asleep? And for Luke, already suspicious but also cautious to investigate that way?

It neither makes sense nor does it lack sense. That's not what we're discussing though. The Force functioning in the manner you're describing is never even hinted at. Just because something is plausible doesn't mean it gets a pass.

I've been thinking about this more on and off today, and I think I figured out where our perspectives differ.

At that point in the movie, I was already immersed and my disbelief was still suspended, so that didn't kick me out - Luke went into the tent to sense darkness, therefore he had a reason to do so. To me, it was implied. Your disbelief was already somewhat shaky, so you didn't give it the benefit of the doubt - and it stuck out as a plot hole. Fair?

Agreed. While I love the reserved fighting in the OT, it would be really cool to see the OT duels made in the style of the flashy PT duels.

Okay so yeah I have mixed feelings on the movie.
My biggest gripe though is
the utter ass-pull that was Leia suddenly having Force abilities and guiding herself back to the airlock after magically surviving a direct blast. Talk about Plot Armor.

She was meant to play a large role in Episode 9. Maybe taking up the role of Jedi after Luke's death or something like that. I think that scene was hinting towards something like that. Obviously her tragic death kind of blew a hole in that plan.

I like the way Vader's so full of rage angrily swinging his saber everywhere. Kind of how I imagine a Prequel-style fight between them might go down. He'd have to be pissed seeing the guy again who basically turned him into a cyborg.

In universe Vader fought more cautiously in IV because overestimating himself got his limbs lopped off in the last fight with Obi Wan. It makes sense that he’d hold back so many years later, because he knows why he lost before and he’s a pretty smart guy.
