It doesn't have all the bullshit EVE has like an economy that is always flying by the seat of it's pants because playing the game is like having a second job and it's totally player-driven so that if nobody is playing the economy's dead.
I'd really like to see character customization, building your own colonies, large capital ships full of players, faction planets and whatnot.

It's entirely up to you. Personally, Id recommend doing legal trading just to get some income. Read the galnet for current news, and learn about the game. You could join a faction though, you get a weekly bonus for your pledge. But you do you. There is no right way to play the game.

There is a Covenant you can find later in the game that might help you with player invasions.Relatively far through, much further than Blue Cathedral where you are, is the Royal Rat King. You find him in/after the Doors of Pharros?? Been a long time since I played 2, but basically if you wear his ring, then when you are invaded, you'll sometimes both be summoned to Doors of Pharros and the NPCs should help you?
I think that was the gist of it, but I managed to get halfway through NG+ and still haven't been invaded.

I'd tentatively say "mostly". A couple of NPCs who give you Covenants sometimes want you to join their Covenant before they'll ask you to do something else, but it's definitely an "online thing". They're functionally clans.

if you're offline there's not much of a point to covenants
all but two of them are pretty much only for online play (there are two coop ones, three invading PvP ones, and two summoned pvp ones)
and of those two PvE covenants
one of them really isn't for first time players (Company of Champions, which basically raises the difficulty to NG+ levels: enemies, including bosses, deal roughly 50% more damage, have varying HP increases, and gain roughly 20% damage resistance). obviously you can go for it if you want a fun time, you can find the covenant at the victor's stone in Majula: take the path to the right near the doorway to Heide's Tower and you should find it
the other is endgame contentthe covenant is the Pilgrims of Dark. you can access it once you reach Drangleic Castle and talk to Grandahl for the third time: he also appears in Black Gulch and Shaded Ruins and you need to talk to him in all these places to access the covenant. it just unlocks some optional PvE content (some dungeons called Dark Chasms of Old and a boss known as the Darklurker) if you want to challenge yourself.
