I'd be light cavalry out of self-preservation. You get to mainly attack people who are already running away and won't fight back, and you can desert very, very quickly if necessary.

Whenever I can, Horse Archers and Light Cavalry. They're a good combination in most situations unless you're fighting a defensively-oriented army in the mountains or jungles.
