I don't think I view symphonic metal much different. I didn't like Blind Guardian or Sabaton.

I think actually the only symphonic/power metal I liked somewhat was Kamelot, but that may be because they've been drilled into my head so much by my sister I got to the point I could tolerate it.

I think I met both my soulmate and my evil twin at the Blind Guardian show last night.

The strangers I ended up next to were: on my right, a really cute girl about my age wearing Blind Guardian wristbands and beanie who knew almost as many of the lyrics as me (which is impressive). We had air-guitar battles to "Mirror Mirror" and "And The Story Ends" haha. And on my left: a guy also my age who was exactly as tall as me, had the same facial hair and hair color/style as I currently do, and...had the same first and middle name as me. Hello me, meet the real me!

Oh yeah, and the show was good too :p
Setlist and a couple videos here. "Bright Eyes" and "Majesty" live really got the place going in particular.

I mean, she told me her name so I found her on Facebook later, but I haven't decided whether or not to friend her because I thought it might be creepy :p She lives in Oklahoma and drove 3 hours to Dallas from the opposite direction I did (from Austin) so it's highly unlikely we'd ever see each other again anyways.
