Combination of nostalgia and genuinely enjoying the show. It isn't perfect by any stretch, but honestly, neither was Z. Basically, I'm having fun watching it. Is it some great piece of cinematic storytelling? Hardly. and now for some actual behavioural stuff, in the first episode of the new arc we see the Future Zeno behaving oddly, for no apparent reason he seems to keep trying to imitate the other Zeno, when the other Zeno raises his hand the future one sort of mimics this after accidentally doing something different. this is weird, it's not comedic in nature, and every thing they choose to animate has to have some sort of reason for it right?
then there's the universal destruction rule. what if that rule is really Zamasu in Zeno's body continuing with the Zero Mortals Plan?
while I'm not entirely convinced of this theory yet, if they ever show the future Zeno insisting on the destruction rule that would be very suspicious...

Way too early to say for sure at this point- it could also be that it was a throwaway gag to resolve the whole "Goku promised to bring present Zen-Oh another friend to play with" from way back at the beginning of the arc, too. Same with the mimicry- it could be foreshadowing of something more sinister, or it could be a throwaway gag as well.
I think a lot of it really comes down to Zen-Oh just being so alien an entity that it really defies comprehension. The little guy is effectively the most adorable eldritch horror ever, with little understanding and no empathy whatsoever for the lives of mere mortals, or even the various deities that answer to him given his already-known destruction of multiple universes apparently on a lark, and casually using entire planets as galactic marbles when Goku arrived to ask about the tournament. I doubt he has any real concept of friendship, and views Goku as little more than a particularly amusing toy... and like any sociopathic, incomprehensible child, toys get broken.

Zamasu is my favourite villain ever in DB, I even did this fanart of him
and the theory kind of makes me want to draw some cool new ultimate Omniking Zamasu

Zamasu himself was functional as an antagonist, but I'm not sure I'd call him an especially good or even interesting villain. There weren't really any surprises with Zamasu himself- his motivations, behaviors, and god complex are all painfully cliche from the moment you first hear him agonizing over why the mortals are so uncivilized and all that. From the minute you first see him, the suspense and surprise are basically gone- the viewer knows he's going to turn full blown black-and-white moral extremist and go for the "peace is achieved by killing the impure/unworthy/etcetc" routine. And making him immortal, while providing an interesting challenge, did back the storytelling into a bit of a corner in regards to "Well, how are the heroes supposed to overcome this?" and it shows in the final couple of episodes of the arc.
Black, on the other hand, was an amazing villain. The mystery about who he is, what he is, and why he's doing what he's doing kept him intriguing and interesting. The fact he first appears in the future timeline, the timeline where Goku's been dead for north of 20 years was a huge boost to the whole "OMG WTF IS THIS GUY?!" It couldn't REALLY be a Goku-turned-evil, because we know in that timeline Goku's been dead for years. At that point, we don't know about the time rings, or about Zamasu. All we have to go on is this eloquently-spoken guy calling himself Goku has shown up and is hellbent on genociding humanity for reasons not entirely clear. Even after Zamasu has revealed himself and we find out what the deal is with who/what Black really is, he's still the vastly more interesting of the two, thanks in no small part to the subtle differences between the two and how they behave. Zamasu remains cliche, but with Black, we've got some full-blown "The Mind is a Plaything of the Body" in play thanks to his stolen body and the behavioral predispositions hardwired into Saiyajin genetics.
Awesome fanart, BTW! He really does have an interesting design, I gotta admit. I have approximately zero talent when it comes to drawing. Writing, on the other hand... *eyeballs that fancharacter backstory "drabble" she's mentioned before*
