Speaking of Cults perhaps we could incorporate "cult wars" into the religions development, similar to ones that took place in Greenland. Were the followers or cult of a specific God waged war against another cult.

why not have something like the Greek city states that all had their patron gods, and fought amongst themselves, praying to those specific gods for strength!

Considering this religion is based in Polynesia, I doubt cattle would be used in symbolism.
