I was thinking that, considering that there seems to be a more equal amount of males to females in like Manehatten, Canterlot, and maybe Appleoosa and Dodge Junction.

Yup, I'm utterly insane, seeing something and assuming the complete lack of evidence to the contrary means it exists as presented . I suppose the fact that I think water is wet, up is the opposite of down and two plus two equals four is further evidence of my lunacy.

Because after the treaty with Saddle Arabia was signed in the second Trixie episode, that front of Celestia's endless wars of conquest was temporarily ended. Since the Saddle Arabian dignitaries visited Ponyville of all places, we can assume that that's a nearby front, so we're seeing more men in Ponyville because they're back from the fighting. Furthermore, that's why Gilda is the only griffin we've seen- the war against the Griffon Kingdom resumed shortly after she left.
